DescriptionHippuric acid, also known as N-benzoylglycine or hippurate, belongs to the class of organic compounds known as hippuric acids. Hippuric acids are compounds containing hippuric acid, which consists of a of a benzoyl group linked to the N-terminal of a glycine. Hippuric acid is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, Hippuric acid is found, on average, in the highest concentration within milk (cow). Hippuric acid has also been detected, but not quantified in, american cranberries and avocado. This could make hippuric acid a potential biomarker for the consumption of these foods. An N-acylglycine in which the acyl group is specified as benzoyl. Hippuric acid is a potentially toxic compound.
