Description2-Hydroxy-3-methyl-2-cyclopenten-1-one also known as Methylcyclopentenolone, Maple lactone or Cyclotene or is a methylated derivative of cyclopentenolone. It belongs to the class of organic compounds known as cyclic ketones. These are organic compounds containing a ketone that is conjugated to a cyclic moiety. Cyclotene exists as a colourless solid and has a sweet, woody, maple or caramel taste and a sweet, maple, carmellic, nutty taste. It contributes to the flavor or odor of many foods including wines, coffee, paprika, and salmon. Cyclotene is found naturally in many plants and other foods including roasted almonds, roasted barley, bread, chicory, cocoa, coffee, black currants, licorice, malt, roasted onions, peanuts, bell peppers, pork fat and maple syrup. 2-Hydroxy-3-methyl-2-cyclopenten-1-one (Cyclotene) is a constituent of cannabis smoke and is formed during the combustion of cannabis ( Ref:DOI ).
