Description5-Ethyl-2-vinylpyridine, belongs to the class of organic compound known as pyridines and derivatives. These are compounds containing a pyridine ring, which is a six-member aromatic heterocycle which consists of one nitrogen atom and five carbon atoms. 5-Ethyl-2-vinylpyridine is one of several structural isomers of ethylvinylpyridine which is substituted by one ethyl and one vinyl groups at different positions of the pyridine ring. It exists as a clear, slightly yellow liquid that is insoluble in water. 5-Ethyl-2-vinylpyridine is one of the components that contribute to the nutty, roasted aroma in the Parmigiano-Reggiano cheese. It has been reported to be found in dry red beans, cocoa, tea, whiskey, peppermint oil, roasted and fried chicken, cocoa, coffee and cooked shrimps. It has a sharp, penetrating aromatic odor. 5-Ethyl-2-vinylpyridine is also found in marijuana smoke and is formed during the combustion of cannabis ( Ref:DOI ).
